- 1 lb. white fish (such as sea bass, halibut, haddock, cod, monkfish, etc., skinned and deboned)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3 dried chiles (Thai, soaked in warm water until softened, drained, reserve soaking liquid)
- 5 scallions (greens and whites separated, greens thinly sliced; whites roughly chopped)
- 2 shallots (small, chopped)
- 2 Tbsp. oil (grapeseed, peanut, canola)
- 1 can coconut milk (divided into 1/2 cup thicker and 1/2 cup thinner milk)
- 2 Tbsp. fish sauce
- 5 kaffir lime leaves
- chopped fresh herbs (for garnish, cilantro, Thai basil, optional)

Very good, relatively easy to make curry paste. Additionally add lemongrass stalk, kaffir lime leaves and half inch galangal in the curry for extra flavour. I prefer with chicken as fish gets too crumbly. Add baby aubergines 5 minutes before adding fish and add additional green part of scallion to color the curry more.

Really enjoyed this, unfortunately i used dried herbs and didnt really have scallions or fresh pepper which i’m sure would really lift it up.. but still it was yummm! Thanks for the recipe!
