  • 1 white onion (finely sliced)
  • 3 garlic cloves (crushed)
  • 1 piece fresh ginger (about a thump size peeled and finely grated)
  • 1 tablespoon coconut oil
  • 1 tofu
  • 2 tablespoons thai green curry paste
  • 400 milliliters coco (Vita, Original Coconut Milk)
  • 3 cups vegetable stock (depending on how creamy or runny you like it)
  • 1 block firm tofu (about 280gr)
  • 200 grams tenderstem broccoli (packchoi is another great option)
  • 120 grams shiitake mushrooms
  • 2 tablespoons soy sauce
  • 200 grams noodles (your choice – I have used rice noodles)
  • 1 handful chopped coriander
  • sesame seeds
  • chilli flakes (or fresh chopped chilli)
  • 2 spring onions (finely chopped)
