- 13.5 oz. coconut milk (can be low fat...I buy it at Trader Joe's)
- 3 cups chicken broth
- 2 Tbsp. fish sauce (sounds weird, but adds a great flavor without being overpowering)
- 1 stalk lemon grass (cut into thirds and smashed with a knife)
- 3 garlic cloves (grated)
- 2 Tbsp. ginger (grated)
- 1 red bell pepper (cut into small slivers)
- 5 shitake mushrooms (sliced, optional)
- 2 Tbsp. red curry paste
- 1 tsp. curry powder
- 1 Tbsp. brown sugar
- 2 Tbsp. lime juice (fresh squeezed)
- 1/2 lime
- 3 Tbsp. cilantro (rough chopped)
- 1 Tbsp. green onion (chopped)
- 20 shrimp (uncooked)
- 2 cups cooked rice (cook according to package instructions)

Excellent! It was too much lime flavor though, so I added a can of crushed tomatoes, another Tbsp curry paste. I threw in some spinach and 1 cup lentils also. It made a huge pot of soup which 4 of my family consumed in about 2 days! I’m making another pot today!

AWESOME! This was an excellent recipe. 35 minutes may not include real prep time. It turned out very well EXCEPT 1 tbsp of brown sugar was too much for us. I would perhaps go down to 1/2. I also used lo mein noodles (ramen) instead of rice, lemon zest as a substitute for lemongrass, and left out the mushrooms. It really makes a large pot so consider the recipe if you need to make less. We have left overs which isn't a bad thing. Oh, and it doesn't really say how long to cook this, so I had to eye it.
