- 1/2 Tbsp. lemongrass (fresh, paste, or half a stalk)

- 10 oz. white mushrooms (fresh, sliced)
- 3 oz. snow peas (fresh fancy, cut in half diagonally)
- 8 cups vegetable broth (I used my homemade broth!)
- 14 oz. full fat coconut milk (2 canned)
- 3 Tbsp. brown sugar
- 1 Tbsp. worchestershire sauce
- 1 Tbsp. soy sauce
- 1/2 tsp. crushed red pepper
- 1/2 Tbsp. miso paste
- 20 oz. firm tofu (drained and diced)
- 2 limes (juiced)
- 1 handful fresh spinach
- 1/2 cup fresh cilantro (chopped)
- 2 green onions (thinly sliced)
