- 2 Tbsp. coconut oil
- 2 1/2 lb. butternut squash (1kilo, peeled, seeded, and cut into 1-inch pieces, about 4 cups)
- 1 yellow onion (large, chopped)
- 4 large garlic cloves (chopped)
- 2 inches fresh ginger (piece, grated)
- 3 Tbsp. Thai red curry paste (see note above about vegan brands of paste)
- 1/2 tsp. coarse kosher salt (more to taste)
- 2 Tbsp. agave (or honey, not vegan)
- 1 Tbsp. fresh lime juice
- 5 cups vegetable broth (or chicken - not vegan, obviously, 1liter)
- 1 cup coconut milk (save the rest of the can for drizzling, 250ml)
- 1 handful fresh mint leaves (chopped)

This soup was easy to make and tasted great! I topped my bowl with cilantro leaves which added dimension. My husband and I are looking forward to the next batch. We didn’t know what we were going to do with our harvest of butternut squash. Now we know!

Very easy. Used a pressure cooker and It turned out great. Just the right amount of heat too. Thank you will make this again.

So good! Even better than butternut squash soup. The Thai curry paste and lime juice (a little more than the recipe suggests) added really interesting flavors. I'll be making this over and over again!
