- 2 pieces lemongrass (cut into 1 inch pieces and then sliced lengthwise)
- 4 garlic cloves (sliced)
- 1 piece fresh ginger (peeled and sliced)
- 8 cups chicken broth (I love to use Better Than Bouillon brand)
- 2 lb. boneless, skinless chicken breast
- 8 oz. mushrooms (sliced, I use a mixture of varieties, but you can use whatever you have on hand)
- 2 Tbsp. fish sauce
- 2 tsp. sugar
- 14 oz. coconut milk
- cilantro
- lime wedges
- spring onions
- chili oil (or paste)
