Took the concept and tweaked to my needs and tastes, as I always tend to do with soups. This is going in the regular rotation. The only ingredient I added that wasn't listed was ginger. The maple syrup was a fun touch.

Sweet and spicy! Substituted 2 tsp dried red curry for the paste and I was out of coconut milk so I used almond and added some shredded coconut I had in the freezer. It was creamy and the spice was just about right - (we like things on the hot side) I didn’t think the cilantro added anything Next time I’ll skip that - maybe toast some nuts for protein, use a can of coconut milk and it will be even better!

Loved it ! I used regular coconut milk and veggie broth. Turned out great.

I made this really wanting to love it. The picture makes the soup look so warm, beautiful, and comforting! Since I love Thai flavors, I thought it would be a complete hit...however, as it was, it didn't blow me away. Don't get me wrong - the soup wasn't bad at all. The flavor was strong and a good balance of slight heat paired with sweet. It just seemed like one thing was missing and I never could decide what that ingredient was. I give it 4.5 out of 5 stars.
