- 6 cups chicken stock
- 2 chicken breasts (sliced, or 1 to 2 cups roasted chicken or turkey)
- 1 cup shiitake mushrooms (sliced)
- 4 leaves (kaffir limes, fresh or frozen)
- 3 red chilies (fresh and minced to taste, or 1/2 to 3/4 teaspoon dried crushed chili peppers)
- 1 piece galangal (or ginger, thumb-sized and grated)
- 13.5 oz. coconut milk (good-quality)
- 2 Tbsp. fish sauce (or more to taste)
- bell pepper (Optional: sliced, or cherry tomatoes)
- 2 Tbsp. lime juice
- 1 tsp. brown sugar (to taste, optional)
- 1 handful coriander leaves (fresh)
- 1 handful basil leaves (fresh)
- 3 spring onions (sliced)
- wheat noodles (Optional:, or rice noodles, if serving as the main course)

Great. I improvised and couldn’t find some of the ingredients (even at the Asian market), but since this is one of my favorites, I knew the flavor I was looking for and could play with it. I’m not sure how it would turn out if I followed the recipe to a T and had never eaten this before.
