The flavors were excellent. I reduce the water in my bouillon base to serve as a noodle dish instead of soup.

Surprisingly really delicious! I’m not the biggest fan of coconut milk in savoury dishes as I generally don’t like mixing sweet and savoury things together. I wanted to try new flavours and this turned out really good! I added less brown sugar as I didn’t want it too sweet, since after the coconut milk it was already sweet enough. I would recommend adding more water with your stock as after adding in the rice noodles, there wasn’t much soup left since the noodles soaked it up. I would probably add more spice like chilli oil in the future as this wasn’t spicy at all.

This soup went over really well at our home for going out of our comfort zone. My husband liked the heat if you followed the directions. I added hot sauce to amp up the heat. I only rated it 4 stars because I think it took longer than 15 minutes to prep for the dish and it requires a lot of ingredients that I needed to purchase. I cut the recipe in half and we had plenty left over after the two of ate our fill.

OMG! This was YUMMLY AWESOME! I cut the recipe in half and used broccoli instead of cauliflower. Half of the rice sticks was too much — I will use less next time. It was more like stew than soup and but nevertheless it was delicious—and I wouldn’t change anything else. Don’t skip the cilantro and red chili garnish; I also added a squeeze of lime to my bowl.
