The main attraction here is the peanut sauce, which is delicious and super simple to make. I subbed the pepper with cooked broccoli and left out the red cabbage. A great meal prep option that I will make again!

This Was so delicious! I didn’t use red peppers but put in onion and cauliflower. The peanut sauce was to die for and so easy!

It was good but I feel like it’s missing something to make it truly Thai tasting. I’m not a good cook by any means but I’ve had plenty of Thai food and there’s just sth missing here to give it full marks on the Thai food scale. Otherwise a super simple recipe (one that I can do without making a complete mess) that tastes great!

Super easy to make and tasted amazing! I made some quinoa to go with it for dinner and substituted spinach for the romaine though.
