Honestly I’m surprised how good this was.
I don’t normally like peanut sauce and tasting just the sauce.. I was worried but mixed together with everything it was delicious!

I loved this, I made it in to a stir fry. Next time I’ll add twice the amount of cabbage, carrots, peppers (2 cups of each). I’d also probably add broccoli and bamboo shoots. My husband said he thought it was too heavy on the peanut taste. I disagree, but it did end up being a thicker sauce…so maybe add more water and maybe some coconut milk (that would also require more water, but I think that was the rate that was missing.)

The main attraction here is the peanut sauce, which is delicious and super simple to make. I subbed the pepper with cooked broccoli and left out the red cabbage. A great meal prep option that I will make again!

It was good but I feel like it’s missing something to make it truly Thai tasting. I’m not a good cook by any means but I’ve had plenty of Thai food and there’s just sth missing here to give it full marks on the Thai food scale. Otherwise a super simple recipe (one that I can do without making a complete mess) that tastes great!
