- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 2 Tbsp. coconut oil
- 1 red bell pepper (thinly sliced)
- 1 leek (thinly sliced)
- 2 cloves garlic (minced)
- 1/2 tsp. fresh ginger (grated)

- 1 can full fat coconut milk (14 ounces, do not use light or the sauce won't thicken properly)

The overall concept of the dish is really good; however, you need to add a bit more to really enhance it (More spices, more sauce, more vegetables). If add stuff to make it your own it is a very solid dish

Eh! Was ok. Added red pepper flakes for a little extra zing which helped. Wasn’t anything special.

The dish didn’t pack much flavor. I should have added more spices, Thai basil, or fish sauce. The sauce was not thick enough and tasted too watery. Also the chicken felt over cooked. I should have been weary of recipe that calls for cooking the entire breast whole. I’ve made Thai green chicken curry before and it was much better. Just wish I could find my old recipe. Won’t be making this one again.

There needed to be more veggies, in my opinion. I doubled the sauce like many commenters said, which tasted good but wasn’t very spicy by my standards. A few res pepper flakes helped. Chicken took longer to cook than stated in recipe.

It turned out really well! I decided to add some eggplant and spicy peppers to give it more kick. Depending on proportions, you might want to add more curry paste than the recipe calls for. Otherwise, I made this dish for 2 different groups of people and both loved it :)

Delicious! I added some red bell peppers with the onions as well as some cayenne pepper for some heat! Will definitely make again!

honestly a very tasty diah I will probably be making again soon. definitely recommend you add some heat to the dish as I will be doing next go round.

not a spicy recipe and not very saucy.
double the garlic, ginger, salt, pepper, coconut milk and curry paste.
add eggplant and bamboo shutes for more texture and filler.
if you want it spicy spicy, add crushed red pepper flakes and more curry paste
serve over white or brown rice.

i added a 1/2 Tbsp extra of of curry and used coconut cream subbed fresh green beans for the leeks, be careful not to add too much ginger likr i accidentally did otherwise it was a great dish

Delicious - I added more curry paste and coconut milk based on other reviews. Will definitely make again.

This was easy and delicious. I was afraid my kids would reject the level of heat and spice but all three of my girls ages 3-10 ate it well! Instead of rice, I used rice noodles and just stirred the cooked noodles in after taking it out of the oven.

It was great! Not that spicy, but definitely low on sauce—next time I’ll probably add some more coconut milk and curry paste so I can have more sauce.

Was very delicious and relatively easy to make. Will be making again but next time want more of the sauce so will be adding more coconut milk and curry paste. Also I like my curry with spice so I will be adding hot curry powder. I will keep this page updated upon making again!
