  • 1 pound boneless skinless chicken breast (diced into bite-sized pieces)

  • 13 ounces coconut milk (I used lite; full-fat will deliver a richer/thicker result)
  • 1 1/2 cups shredded carrots
  • 3 tablespoons Thai red curry paste (or to taste, curry powder may be substituted, to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 3 cups fresh spinach leaves
  • 1 tablespoon lime juice
  • 2 tablespoons brown sugar (optional and to taste)
  • 1/4 cup fresh cilantro (finely chopped for garnishing (basil may be substituted))

    this was great! no complaints. added more pepper and used a spicy oil as well as the coconut oil to give it a kick. next time I'll probably add red pepper flakes

    got all the ingredients and did everything by the book. was easy and was fast to make. though, i still felt like it was missing something but couldnt quite put my finger on it. The kids loved it since it wasnt spicy at all. . My father and boyfriend said it was tasteless. i quite enjoyed it but like i said it felt like it was missing a kick. will try again and alter some ingredients. i also reccomend making white rice and putting the curry on top since its quite watery and buying some Chapati to warm up on the stove too.

    Good but not nearly spicy enough. It was pretty bland. Added more salt, curry and some cayenne to spice it up. But overall a good recipe

    This was a great tasting dish. Easy to make. I will totally add it to my recipe box; and make it agin. Maybe after a few times of making it; I will try other curry paste like the green or yellow.

    Easy and great flavor... I added a little chili garlic paste to add more spice and then served it over rice with peanuts cilantro and lime wedges. Delicious!

    So yummy! Kids loved it! I made it without cilantro and it was still great! I doubled the coconut milk. Next time I think I'll triple it -- it was a little light on sauce.

    Added green bell pepper with the onions and sauted mushrooms on the side (added it in when I put the coconut milk in)....it was fantastic served over jasmine rice! Husband went back for thirds and kid approved. This recipe is a keeper!!!

    It was good. I didn't add spinach, basil, or carrots. I added an extra 2 tsps of brown sugar to cover the bitterness of the spices, but that was probably something to do with my spices being old. I added cayenne pepper, because I wanted heat. The dish is very mild without it. All in all, it was very delicious with a side of rice.
