  • 3 tablespoons coconut oil (olive oil may be substituted)
  • 1 vidalia onion (or yellow onion, diced small)
  • 1 pound boneless skinless chicken breast (diced into bite-sized pieces)
  • 3 cloves garlic (finely minced or pressed)
  • 3 teaspoons ground ginger (or 1 tablespoon fresh ginger, finely chopped)
  • 2 teaspoons ground coriander
  • 13 ounces coconut milk (I used lite; full-fat will deliver a richer/thicker result)
  • 1 1/2 cups shredded carrots
  • 3 tablespoons Thai red curry paste (or to taste, curry powder may be substituted, to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 3 cups fresh spinach leaves
  • 1 tablespoon lime juice
  • 2 tablespoons brown sugar (optional and to taste)
  • 1/4 cup fresh cilantro (finely chopped for garnishing (basil may be substituted))
  • rice (quinoa, or naan, optional for serving)

    Great recipe taste delicious. I added some red bell pepper to it at the same time as the carrots and pre cooked some shrimp in olive oil and ginger which I added them at the same time as the spinach. It was fantastic.

    Good! I wish it had a little more flavor and that I let it simmer longer for the chicken to soak up more curry flavor! I recommend seasoning the chicken and seasoning every step of the way

    Great recipe! Also used green curry paste instead because we aren’t a fan of spicy in our home, we both had it for lunch again the next day! I’ll be repeating this, so easy & a delicious change in our kitchen.

    Great recipe, simple to follow and make. Everyone happy with the result, clean plates always welcomed. Will try again and follow some of the other suggestions to add a bit more spice with some sambal or more curry paste. Overall very happy.

    My wife and I love this dish. I probably make this at least once a week. I usually add a couple splashes of fish sauce and a little bit of sambal to give it some kick.
