  • 1 pound boneless skinless chicken breast (diced into bite-sized pieces)
  • 3 cloves garlic (finely minced or pressed)
  • 3 teaspoons ground ginger (or 1 tablespoon fresh ginger, finely chopped)
  • 2 teaspoons ground coriander
  • 13 ounces coconut milk (I used lite; full-fat will deliver a richer/thicker result)
  • 1 1/2 cups shredded carrots
  • 3 tablespoons Thai red curry paste (or to taste, curry powder may be substituted, to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 3 cups fresh spinach leaves
  • 1 tablespoon lime juice
  • 2 tablespoons brown sugar (optional and to taste)
  • 1/4 cup fresh cilantro (finely chopped for garnishing (basil may be substituted))

    Alright, I've actually never had curry before but I was about 400 Calories short last night saw this and decided I was gonna make it. This was the most delicious tmdishbI have ever tasted honestly. I added some red pepper flakes cumin and tumeric and it was just great. Sweet when you bit into it then you got the spice. I will be making this again!!

    I made several changes to this recipe but the base ingredients and directions were followed. I doubled the coconut milk because I added broccoli florets, yellow bell pepper, and more chicken. Really good and quick for weekday dinner. I served with sticky rice. Will make again!

    I shouldve doubled the recipe. It was so good that my kids ate seconds. And I likes the ingredients used because I can use the leftover ingredient for a curry dish as well

    I love this recipe. It is very simple, so simple I was reluctant to try at the beginning, but the resulting curry was very flavorful. My wife and I particularly liked the sweetness of the sugar. I used about 1 tablespoon and I believe more than that would be too much. I had to substitute spinach for kale and served it with brown rice and tomatoes. Everyone at home had a second plate of it and by the end of the night the saucepan was empty. Total success, we’ll definitely repeat this recipe again.

    I just made this curry and it’s simple delicious! I didn’t want to buy the huge coconut oil jar so I used olive oil and I also used fish sauce instead of salt and didn’t need any sugar to balance it out. Serving it with wild rice. Can’t wait to tuck in!😋

    This was so good!!! I added 2 chicken breast’s and also shredded zucchini and asparagus and a little extra coconut milk the Thai brand and cooked jasmine rice with it snd my goodness this is and amazing recipe!!!!!!!!

    Very good!! I used 3 breasts which ended up being perfect.
    It was delicious! I don’t understand why it only calls for one chicken breast I added three (they were small) but would definitely add more chicken I also added two cans of coconut milk, extra spinach and shredded carrots I also made rice noodles! It was so good! There aren’t many restaurants where we moved to and now I can get Thai do by making it myself!

    Great! I added another can of coconut milk. I also added cauliflower and some asparagus that I wanted to use up. I added a splash of fish sauce for a dash of authentic saltiness. Great recipe that can stand on its own as-is, or can be easily adapted to suit personal tastes. My gluten/dairy sensitive daughter loved it. I used full fat coconut milk and left out starches so it fit my keto diet.

    Awesome!! We added more chicken (about double the amount) to give it some more substance, but the flavor was spot on! Don't worry if there's a lot of liquid for a while, by the end ours cooked down a bunch. The brown sugar was great, I tried it before and it was a pretty harsh level of spicy (I like things super spicy, but the person I was cooking with has a more moderate palate), the sugar made it even out a lot. I kind of want to try this subbing in kale for the spinach!

    This is my favorite recipe I've made from this app. I used coconut oil, fresh ginger, but left off the cilantro garnish (because I forgot). I added red pepper flakes for heat and will probably add more veggies next time. Served with basmati rice. So good!
