  • 3 tablespoons coconut oil (olive oil may be substituted)
  • 1 vidalia onion (or yellow onion, diced small)
  • 1 pound boneless skinless chicken breast (diced into bite-sized pieces)
  • 3 cloves garlic (finely minced or pressed)
  • 3 teaspoons ground ginger (or 1 tablespoon fresh ginger, finely chopped)
  • 2 teaspoons ground coriander
  • 13 ounces coconut milk (I used lite; full-fat will deliver a richer/thicker result)
  • 1 1/2 cups shredded carrots
  • 3 tablespoons Thai red curry paste (or to taste, curry powder may be substituted, to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 3 cups fresh spinach leaves
  • 1 tablespoon lime juice
  • 2 tablespoons brown sugar (optional and to taste)
  • 1/4 cup fresh cilantro (finely chopped for garnishing (basil may be substituted), optional)
  • rice (quinoa, or naan, optional for serving)

Kids approve! I used lemon instead of lime juice bc that’s what I had on hand. Next time I’ll use lime juice.

We love it! Have prepared it several times, never fails. Today used kale instead of spinach and worked well. I use less salt, like 1/2 tsp.

This recipe is super yummy. I’ve made it with both lite and full fat coconut milk. Much prefer full fat😁.

Great recipe taste delicious. I added some red bell pepper to it at the same time as the carrots and pre cooked some shrimp in olive oil and ginger which I added them at the same time as the spinach. It was fantastic.

It turned out great! I adjusted the portions for one and it was an easy change. Though I didn’t have garlic on hand or sliced carrots, this recipe was still a hit.
