- 2 butternut squash (medium, peeled and roasted for about 1 hour at 450 degrees Fahrenheit or until tender)
- 1 1/2 Tbsp. curry paste (red Thai, sold in most supermarkets)
- 15 oz. coconut milk
- 1 qt. vegetable broth
- 2 cups thai basil (fresh, or regular basil, Thai basil is sold at Asian food stores)
- 5 kaffir lime leaves (or the juice of one small lime, you can also get kaffir leaves at Asian food store)
- 1/4 cup dates (pureed)
