- 13 oz. coconut milk (1/2 -1, can, liquid and solids, saving a couple of tablespoons for garnish, optional)
- 1 tsp. sugar (or alternative)
- 1 spinach (optional, to enhance color)
- 1/2 cup cilantro (-tender stems OK, divided)
- 3 Tbsp. fresh lime juice (2–)
- 2 tsp. fish sauce (1-, optional or vegan fish sauce, or add a little more salt to taste)

The best soup I’ve ever made! Very important to remove kafir lime leaves before blending. I used potatoes and added whipped yogurt instead of coconut milk.
