I used a pellet fed smoker and because I didn't have a disposable pan I just used 4-5 sheets of heavy duty foil and kinda made a pan... The bottom of the brisket got a bit hard, but not so bad we couldn't eat it. We made this for the 4th of July. I got up at 7am and had it ready to go into the preheated smoker at 8am and we were eating good after the parade by 7pm. So good, so worth the time. Best thing we ate that day!!
