This was so simple and came out deliciously cheesy although I can't really say I felt there was anything especially Tex-Mex about it but for the fact tortillas were used in place of a regular crust. That being said I think this is something that could be easily changed up by adding whatever meats or vegetables you like. It would be the perfect base I think to just about any quiche.
