  • 1/4 cup Chinese cooking wine (or dry sherry)
  • 2 tablespoons honey
  • 2 tablespoons teriyaki sauce
  • 2 teaspoons sesame oil
  • 2 cloves garlic (finely chopped)
  • 2 teaspoons ginger (finely grated)
  • 18 jumbo shrimp (peeled and deveined, with head and tails intact)
  • 6 green onions (cut into thirds)
  • 18 bamboo (skewers, soaked)
  • 4 ounces baby greens (Asian)
  • 1 tablespoon sesame seeds (toasted)
  • lime wedges (to serve)

    Directions

    1. Mix wine, honey, teriyaki sauce, oil, garlic and ginger in a large bowl. Add shrimp and green onions; toss well. Cover and refrigerate 30 mins.
    2. Thread one shrimp onto each skewer. Heat a grill pan on high heat or preheat grill to medium-high. Cook shrimp 2-3 mins each side, until cooked through. Cook onions 1 min or until golden.
    3. Toss onions with greens. Serve shrimp on a bed of greens. Sprinkle with toasted sesame seeds. Serve with lime wedges.
