- 2 cups zucchini (quartered and cut into ½ inch slices)
- 2 cups white button mushrooms (quartered)
- 1 cup carrots (sliced diagonally)
- 1/2 red pepper (sliced)
- 1 block extra firm tofu (or firm, cubed)
- 1/2 Tbsp. sesame oil (or coconut oil)
- 4 Tbsp. soy sauce (or Bragg's Liquid Aminos)
- 2 Tbsp. garlic chili sauce (or sriracha, or a mix of the two)
- 3 cloves garlic (minced)
- 1 Tbsp. brown sugar
- 1 Tbsp. peanut butter
- 2 Tbsp. sesame oil
- 1 Tbsp. sesame seeds (optional)
- water (to thin the sauce)

There are specific steps to take but well worth the process.
I doubled my peanut sauce, easy to adjust the desired flavor.

This was amazing! I added some extra peanut butter and didn't have sesame oil so I used coconut oil instead. I did use a genereus amount of sesame seeds for the saucr though. I blitzed the sauce before putting it in the pan with the tofu, which helped with the consistency. Great recipe <3
