- 1 tsp. fennel seeds
- 3 Tbsp. sage leaves (fresh, finely chopped, about 7-8 good sized leaves)
- 1 tempeh (pack of, 250g, broken into small pieces)
- 1 parsnip (large, peeled and diced, approximately 2 cups or 300g)
- 1/2 cup apple cider
- 2 cups vegetable stock (use a good quality, well flavoured stock)
- 1 Granny Smith apple (peeled and diced)
- 1 lemon
- ciabatta bread (cubed, approximately 200g, I used two ciabatta buns, preferably 1-2 days old)
- 1 cup walnuts (roughly chopped)
- 2 Tbsp. olive oil (extra)
