- 1/4 cup fresh lemon juice (I used the meyer variety, squeezed)

- 1 cup superfine sugar
- 1/2 tsp. lemon zest (fresh)
- 1 tsp. ginger root (grated, fresh)
- 1/2 stick butter (chopped and softened to room temperature)
- 14 oz. walnuts (whole)
- 1/4 cup oat flour
- 4 Tbsp. butter (softened to room temperature + a little extra for greasing)
- 4 Tbsp. sugar (fine)
- confectioners' sugar (a little, to dust, optional)
