  • 4 stalks lemon grass (plus extra chopped to garnish)
  • 4 tuna steaks (small, about 4 oz each)
  • 2 tablespoons tandoori paste
  • 2/3 cup yogurt
  • 1 teaspoon sugar
  • 1 1/2 cups wild rice (mixed long grain and)
  • 1 tomato (deseeded and finely diced)

    Directions

    1. Push a lemon grass stalk through each tuna steak and place in a shallow non-metallic dish. Mix together the tandoori paste, yogurt and sugar and spread over the tuna steaks. Cover and marinate in the fridge for 2 hrs.
    2. Preheat the oven to 400°F. Place the marinated tuna steaks on a greased baking sheet and bake for 20-25 mins until just cooked through.
    3. Meanwhile, cook the rice in a large pan of boiling salted water until just tender. Drain well and stir in the diced tomatoes. Serve the cooked tuna steaks with the rice, garnished with the chopped lemon grass, lemon balm and lemon wedges.
