- 2 Tbsp. spice mix (Tandoori Masala, divided )
- 1 Tbsp. olive oil
- 1/2 tsp. salt (divided )
- 4 cloves garlic (finely chopped )
- 1 inch ginger (piece, finely grated, I use a microplane)
- 1 cup tomato sauce
- 1 cup light coconut milk
- 2 cups fresh spinach (chopped)
- 2 Tbsp. greek yogurt ( Dannon® Light & Fit®, with Zero Artificial Sweeteners, Vanilla or Coconut Cream flavor)
- 1/3 cup chopped cilantro
