  • 2 tablespoons spice mix (Tandoori Masala, divided )
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (divided )
  • 4 cloves garlic (finely chopped )
  • 1 inch ginger (piece, finely grated, I use a microplane)
  • 1 cup tomato sauce
  • 1 cup light coconut milk
  • 2 cups fresh spinach (chopped)
  • 2 tablespoons greek yogurt ( Dannon® Light & Fit®, with Zero Artificial Sweeteners, Vanilla or Coconut Cream flavor)
  • 1/3 cup chopped cilantro
