- 1 Tbsp. boiling water
- 4 skinless chicken thighs
- 4 chicken legs (skinless)
- 3/4 tsp. coarse salt
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ground cinnamon
- 1/2 tsp. paprika (I used pimento d'Espelette)
- 1/2 tsp. turmeric
- 1 1/2 tsp. chilli powder (depending on how hot you want it)
- 10 fresh ground black pepper (turns)
- 1 cup plain yogurt (whole milk)
- 1 fresh lime
- 1 Tbsp. fresh ginger (finely-minced)
- 2 cloves garlic (peeled and finely minced)

I added Garam Marsala instead of paprika and 2x as much fresh ginger. Then I heated the spices on stovetop for more flavor. Instead of frying, I baked at 400 for 30 min then increased temp to 450 for another 20 minutes. For extra crisp, I broiled on high for 5 minutes. Meat was so moist and flavorful.

Pretty good, will have to make it spicier next time. Used on both chicken thighs and Cod
