- 3 lb. beef shank (/shin cut into large chunks, don't cut too small or they will break into small pieces)
- cooking oil
- 3 tsp. brown sugar
- 1 onion (large, peeled and halved)
- 8 stalks green onions (remove roots and halved)
- 3 inches ginger (knob of)
- 2 star anise
- 4 fresh bay leaves (or 6 dried bay leaves)
- 4 cups water
- 1 cup low sodium beef broth (store-bought)
- 2 Tbsp. rice vinegar
- 1 lb. asian noodles (your choice flat rice noodles, thick wheat noodles, or linguine/fettucine is a good choice too)
- 3 Tbsp. bean paste (dou ban jiang Chinese broad)
- 2 Tbsp. bbq sauce (Taiwan, Sha Cha jiang)
- 2 Tbsp. tomato paste
- 1 cup Chinese rice wine
- 2 stalks green onion (finely chopped)
- 2 cups mustard greens (Pickled Asian, roughly chopped)
