Asparagus and fava beans are both harbingers of spring, and that's the time to make this quick and easy pasta dish. The wide, flat shape of tagliatelle is ideal for cradlind the asparagus and beans, but you could also use linguine or papardelle (or even spaghetti). If you can't find baby broad beans, you can use more mature varieties instead; these will require blanching and peeling before using, so enlist your family and friends to help out.

  • 150 grams tagliatelle
  • 15 wild asparagus (cleaned)
  • 100 grams broad beans (baby)
  • salt
  • olive oil
  • ground nutmeg

    Directions

    1. Cook the pasta in a pot with salted boiling water for 8 to 10 minutes. Drain the pasta and set aside.
    2. In a skillet, a tablespoon of oil on medium heat, Add the asparagus and saute for a few minutes, turning often.
    3. Add the baby broad beans and cook for a few minutes. Season with a pinch of salt.
    4. Mix the pasta with the asparagus and beans.
    5. Plate and drizzle some olive oil and sprinkle some nutmeg on top.
