i did like this... didnt absolutley love it. hubby didnt care for it much so probably wont make it too many more times. i followed the recipe but when i do this again would maybe add jalapenos or red pepper flakes. i think i like a lasagna or pizza stuffed zucchini boat just a little more.

Excellent, didn’t have enough salsa and tomato sauce, so combined some red enchilada and salsa together and used immersion blender.. Yum! Extra spicy and hubster loves it. Follow rest of instructions. Definitely making again. Served with cilantro and lime rice.2 tacos ( meaning 2 halves ) is only 269 calories.

Omg so good!!! I put plain Greek yogurt on top too. And used a packet of taco seasoning with the turkey. But otherwise followed the recipe.dont miss normal enchiladas at all

Great recipe. I basically just used this as a starter and used my own ideas for filling and cooking the boats. I found it easiest to cook the zucchini in the oven separately and then fill them and bake the cheese. Good news is the kids loved it. Next time, I’m going all-in and making a large casserole dish full of this stuff. Highly recommended!

Delicious!!!! I was missing an onion and green pepper, but it was still delicious! Definitely adding this one to the favorites rotation! 😁

Great recipe. Don't understand the previous comment, I don't find it messy at all? Maybe if you are planning to eat with your hands?! I used ground beef and all the herbs/spices, very tasty. Boiled the courgette for 3-5 minutes so I was sure it would be soft and it was just perfect. Used grilled peppers in stead of raw for extra taste. Served salsa on the side and topped with low fat cheese and spring onion. Served with small potatoes on the side.

Had high hops for these, and we gave them a worthy try, but they were a no-go for us. First, we are on the keto diet and thought these looked like a cool alternative to taco night. The 3 stars is NOT for the flavor. In fact, I may use this recipe again just for the meat. We used lean ground beef (cant get gr. turkey where we live). I added some black beans and used a dallop of plain greek yogurt for extra protein. Would have served with corn, but didnt have any on hand. The 3 stars is because these are super (and i mean SUPER!) messy and the combination just did not work for my husband and kids. I didnt think they were terrible..but not my fav. After the first couple of bites, my kids ended up transferring their meat into soft shells and my husband and I just made taco salads. Again, this is an OPTION for low carb.. just not one we will be trying again.

This was super easy and turned out relatively well. I may have left the zucchini in the boiling water for a little too long, so make sure you take it out RIGHT at 1 min if you want your zucchini a little more crisp. Super good flavor and even my 8 year old ate it!

I didn't have the bell pepper, so I skipped that - would have been even better with it, though. I also increased the cheese a bit. Overall, very simple and tasty! Will definitely make it again.

Very easy recipe - we substituted Morning Star veggie crumbles instead of the ground turkey and it came out amazing! Serve with some tortilla chips and watch your family eat it up! Great way to get the veggies without them noticing

This is an easy delicious recipe that the whole family LOVED! Change it up with corn, black beans and your liking of hot, mild or medium salsa! Definitely a frequent meal in our home! And kids love it too!
