Delicious! Easy and healthy. I cooked my peppers a bit longer, as I prefer them softer. Next time I may add a jalapeño to kick up the heat a bit. Can’t wait for leftovers!

Really great easy recipe. Served with shredded lettuce for extra crunch. Also served with a soft tortilla shell for anyone who wanted to put a slice of the stuffed red pepper into a taco shell.

Turned out great! I’d definitely make this again. I did cook my peppers a little longer about 15 min until they were a little soft.
