I substituted ground turkey for the ground beef and low fat mexican cheese rather than the queso fresco. This was a great soup and worked for dinner and then lunch the next day. I wouldn't add any salt in step 1 next time. After the rinsed beans and canned tomatoes, it was plenty salty enough for my family.

This was one of my favorite recipes from here so far! Hubby likes it spicy so we added a bit of crushed red pepper to it but it was amazing!!
