  • 2 pounds ground white turkey meat (very lean, cooked)
  • taco seasoning
  • 3 tomatoes
  • 1 can black beans (drained)
  • 1 can pinto beans (drained)
  • 1 can corn (drained)
  • 1/2 lettuce (a head of)
  • 1/3 cup diced red onion
  • 24 blue corn tortilla chips (baked, crunched slightly, if you do not have any of the baked blue tortillas you can toast up low carb or sprouted tortillas or Joseph Lavash Breads or Pitas or even add a few crunched Wasa crackers for that crunch)
  • Italian dressing
  • 1 tablespoon olive oil (extra virgin)
  • 3 tablespoons white vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon lemon pepper (or just plain pepper)
  • 1/2 teaspoon Truvia (or Pyure Stevia, if using xylitol add 1 tsp or if using liquid stevia add 1/2 a dropper full which is what I used)
