- 14 oz. diced tomatoes (canned)
- 1 cup canned black beans (drained and rinsed)

- 1/2 avocado (cut into small cubes)
- 1 Tbsp. cilantro leaves (chopped)
- 2 limes (sliced into wedges)
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder

Just finished eating this and it was alright, but could definitely use some improvement. I added sliced olive and mushrooms to the recipe as we always have those with tacos and it seemed weird that it wasn't included already. Also crushed corn chips over the cheese on top, but the cauliflower kind of watered down the taco seasoning, so I recommend draining that as much as possible when you first cook them to tenderize them. Overall, it was a good dish though.
