  • 1 1/2 pounds ground beef
  • 1 package McCormick Taco Seasoning Mix
  • 16 ounces pinto beans (drained and rinsed)
  • 15 ounces tomato sauce
  • 11 ounces Mexican style corn (drained)
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips (coarsely crushed)

    Directions

    1. Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.
    2. Stir in Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips.
    3. Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.

    It turned out really well. We did add some mozzarella because it was gonna go bad in our fridge and we put tortillas in the middle and layered like a lasagna instead of chips. But I do believe it would’ve been great before we changed anything. My husband says, “we are definitely making this again.”

    my husband loved this casserole. i bought healthier doritos from Costco and he used those to dip with. I used garbanzo beans instead of pinto beans and its a hit!! i divide it up for his lunches throughout the week
