- 1 Tbsp. Thai chili paste (red)
- 1/2 tsp. red pepper flakes
- 5 garlic cloves (minced)
- 1 lb. chicken breasts (cut into thin strips, easier to cut if partially frozen)
- 4 cups chicken stock
- 3 bay leaves (OMIT if using galangal and not ginger)
- 3 inches galangal (or ginger sliced into ½ pieces(no need to peel))
- 3 stalks lemongrass
- 1 tsp. dried basil
- 1 tsp. salt
- 1/4 tsp. pepper (OMIT if using galangal and not ginger)
- 13 oz. coconut milk (can quality, I like Chaokoh)
- 2 Tbsp. Thai fish sauce
- 2 Tbsp. brown sugar
- 1/4 cup lime juice (or juice of 2 limes)
- 8 oz. mushrooms (sliced)
- 1 red bell pepper (chopped)
- chili sauce (Asian, to taste)
- lemon juice (to taste)
- salt
- freshly ground black pepper
- cilantro
- green onions
- fresh basil
- lime juice
