- 8 oz. tempeh (cut into 1/3-inch thick strips)
- 1 cherry tomatoes (small basket of, 2 cups)
- 1/4 cup olive oil (extra-virgin, olive oil)
- 1 Tbsp. brown sugar (or maple syrup)
- 1/2 tsp. salt
- 1 head romaine lettuce (cored, then cut into 1/4-inch ribbons)
- 2 avocados (large, mashed with a pinch of salt just before assembling)
- 8 whole grain bread (extra-thin slices of hearty, well toasted)
