- 2 chicken (large, whole legs – skin removed and cut bit size pieces)
- 3 hard-boiled eggs ([see pictures below on how I cook the hard boiled eggs] – lightly tapped but do not peel)
- 6 dried mushrooms (– soaked and stems removed)
- seasoning
- 1/8 tsp. pepper
- 1 Tbsp. light soy sauce
- 1 dash chicken (granules or msg)
- 2 star anise
- 4 cloves
- 3 cms cinnamon stick (piece)
- 2 bay leaves
- 4 cms old ginger (piece, – lightly smashed or sliced)
- 4 stalks spring onions (– use only the end portion)
- 1 tsp. sesame oil
- 1 Tbsp. brown sugar
- 3 Tbsp. light soy sauce
- 1/2 Tbsp. dark soy sauce
- 1 1/2 cups water
