- 250 grams rice noodles (I used chow fun style noodles but any kind you like will work)
- 2 garlic cloves (1-, minced)
- 1 knob ginger (4-5 tbsp juice)
- 3 Tbsp. tamari soy sauce
- 2 Tbsp. tahini
- 1 lemon (1/2 –, or 1-2 limes, juice, and some zest if you wish)
- 1 Tbsp. brown rice syrup (or liquid sweetener of your choice)
- water (A splash of , if needed to thin the sauce)
- toasted sesame oil (optional)
- miso paste (and/or sriracha/hot sauce, optional)
- 2 cups shredded red cabbage
- 1 cup courgette (grated)
- 1 cup carrot (grated)
- 1 cup edamame beans (shelled, I simply thawed some frozen pre-shelled beans)
- 1/2 cup spring onion (sliced)
- 100 grams pea sprouts (/shoots, roughly chopped)
- 1 red apple (cut into matchsticks)
- 1/4 cup sunflower seeds
- sesame seeds (optional)
- tofu (smoked, slices, optional)
- avocado (and/or coriander, optional)
