- 1 tsp. Dijon mustard
- 1/2 Tbsp. lime juice
- 1/4 tsp. freshly ground black pepper
- 1/2 cup tapioca flour (60g)
- 5/16 cup cornmeal (58g, fine)
- 1 1/2 Tbsp. cornmeal (17g, coarse)
- 3/4 tsp. salt
- 1/2 tsp. ground black pepper (freshly)
- 1/2 tsp. ground white pepper
- 1/2 cup whole milk
- 30 oysters (shucked , small-size, or 20 medium-sized)
- 1 handful thai basil leaves (large)
- 2 cloves garlic (finely minced)
- 1/2 tsp. ground white pepper (+ 1/4 tsp of ground black pepper)
- 1 loaf ciabatta (or Italian hero)
- 1 wedge lime (and Tabasco sauce to serve)
