- 3 skinless chicken breasts (boneless, about 360 grams, cut into cubes)
- 1 cup quinoa (uncooked)
- 1 cup black beans (cooked, rinsing thoroughly if using canned)
- 1 red bell pepper (large, coarsely chopped into cubes or chunks)
- 1 bunch green onions (scallions, diced)
- water chestnuts (optional:, slivered)
- ginger (Large nub of, the size of two thumbs, peeled and cut into slivers)
- 1 Orange (large naval, cut into julienne strips)
- 6 garlic cloves (smashed, to release beneficial compounds and chopped or slivered)
- 1 tsp. Szechuan peppercorns
- 3 Tbsp. soy sauce
- 3 Tbsp. orange juice
- 2 Tbsp. water
- 1 Tbsp. hoisin sauce
- 1 Tbsp. rice vinegar (substitute apple cider vinegar)
- 2 tsp. chili garlic sauce (or as desired – it’s hot!)
- 1 tsp. brown sugar
- 3 sesame oil (splashes)
- 1 1/2 tsp. cornstarch
