- 1/2 cup fresh lime juice
- 1 tomato (large, diced)
- 1 cup cucumber (diced, I used homegrown kirby cucumber)
- 1 shallot (peeled and minced)
- 1 chile pepper (Serrano, minced, you could use two if you want it to be quite spicy)
- 1 cup chopped fresh cilantro
- 2 Tbsp. olive oil
- 1 Tbsp. rice vinegar
- 2 Tbsp. Thai fish sauce
- 2 Tbsp. brown sugar
- 1 pinch red pepper flakes (plus more to taste)

YUM! I subbed halibut for the ceviche. This was SOOOOOOOOOOOO very good! Would DEFINITELY make this again!!!!!
