  • 2 teaspoons olive oil
  • 1 bunch Swiss chard (about 3 cups chopped stems and 5 cups sliced leaves, divided)
  • 1/2 cup onions (sliced, I've used Spring onions and yellow onions so far)
  • 1 teaspoon Worcestershire sauce
  • 1 cup breakfast sausage (crumbled, uncooked)
  • 2 cups potatoes (chopped cooked, leftover & cool is fine)
  • 1 cup mushrooms (chopped, white button, baby bella, whatever)
  • 1/2 teaspoon salt (I use kosher)
  • 1/2 teaspoon freshly ground pepper (about)
  • eggs (however many you'll need, some of us like 2 per person)
