- 1/2 cup brown sugar
- 1 Tbsp. granulated garlic
- 1 Tbsp. granulated onion
- 1 Tbsp. cumin
- 1 Tbsp. coriander
- 1 Tbsp. Mexican oregano
- 1 Tbsp. sweet paprika
- 1 Tbsp. chili powder
- 2 tsp. sea salt
- 2 tsp. smoked paprika
- 1/4 tsp. ground black pepper
- 3 lb. baby back ribs (1 rack)
- 2 Tbsp. grapeseed oil
- 1 cup onions (chopped)
- 2 garlic cloves (crushed)
- 1 tsp. sugar
- 1/2 tsp. sea salt
- 1/4 cup tomato paste (canned)
- 2 Tbsp. chipotle in adobo (canned + 2 tsp of the adobo sauce)
- 1 Tbsp. white wine vinegar
- 2 cups chicken broth
- 2 cups finely chopped tomatoes (seeds removed)
- 1 cup onions (finely chopped)
- 1/2 cup cilantro (finely chopped)
- 1 jalapeño pepper (small, finely diced)
- 3 Tbsp. fresh lime juice
- 1/4 tsp. sea salt
- 7 large tortillas (green or red for holidays)
- 1/2 cup sour cream (plus more for serving)
- 1/2 cup Mexican crema
- 1/2 cup crumbled Cotija cheese (for serving)

Directions
- Pre-heat oven to 325 degrees F.
- In a medium bowl, combine rub ingredients: 1/2 cup brown sugar, 1 Tbsp granulated garlic, 1 Tbsp granulated onion, 1 Tbsp cumin, 1 Tbsp coriander, 1 Tbsp Mexican oregano, 1 Tbsp sweet paprika, 1 Tbsp chili powder, 2 tsp sea salt, 2 tsp smoked paprika, 1/4 tsp ground black pepper; reserve 1/4 cup rub for sauce; set aside.
- Using a paper towel, remove thin membrane covering back side of the ribs; cover ribs (both sides) generously with most of the rub; cover tightly with foil and place over baking sheet; bake in pre-heated oven for 2 hours.

In the rub, is the cumin and/or coriander ground into powder form? or whole? BTW, your rub is almost identical to mine, I'll have to add the coriander .... I also add a bit of ground clove or nutmeg or cinnamon to my rub. Also, freshly toasted, then ground, cumin has so much more flavor than ground cumin from the grocer. Mangia, Mangia Mijo
