- 3/4 cup all-purpose flour
- 1/3 cup toasted wheat germ
- 3/4 cup chestnut flour
- 1/2 tsp. fresh marjoram (finely chopped)
- 1/2 tsp. chop fresh sage (finely)
- 4 oz. unsalted butter
- 2 Tbsp. olive oil
- 2 Tbsp. whole milk (cold)
- butter (for greasing foil used in blind baking)
- 1/2 lb. sausages (bulk, pork, turkey or a combination)
- 1 yellow onion (medium, chopped)
- 1 cup half & half
- 1/4 cup heavy cream
- 3 large eggs
- 1/2 tsp. chop fresh sage (finely, if necessary)
- 1/2 tsp. chopped fresh thyme (finely, if necessary)
- 1 Tbsp. prepared mustard (good, I use a stoneground mustard with horseradish)
- 2 oz. Gruyere cheese (or similar cheese, coarsely grated, or more, to taste)
- 1 anjou pears (or Bosc)
