- 2 Tbsp. molasses (fancy/cooking, not blackstrap molasses – can also be substituted with maltose, barley malt syrup or honey)
- 2 cubes tofu (red fermented, and 4 teaspoons of the sauce, mashed together – this is also known as red bean curd)
- 2 Tbsp. hoisin sauce
- 2 cloves garlic (roughly chopped)
- 4 slices ginger (roughly chopped)
- 1 tsp. Chinese five-spice powder
- 2 Tbsp. cooking wine (Chinese rice, or dry sherry)
- 1 Tbsp. pepper flakes (Korean, for additional colour and a mild spiciness. It will also give it a more earthier flavour, optional)
- 3 lb. pork shoulder (cut into long 3 inch thin strips)
- 2 Tbsp. honey
