- 4 cups grated carrot (as a time saver I like buying pre grated carrots)
- 1/4 cup vegetable oil (or extra-virgin olive oil, I like Wesson Canola Oil)
- 1 lemon
- 1/4 cup chopped fresh cilantro
- 1 tsp. ground cumin (I like McCormick)
- 1/2 tsp. ground cinnamon (I like the Spice House)
- 2 tsp. sweet paprika (I like Szeged Hungarian Sweet Paprika)
- 1/2 tsp. cayenne (optional, I like McCormick)
- 1 tsp. crushed red pepper (I crushed my own, but you can use red pepper flakes)
- 1/2 cup raisins (I like Sun-Maid Golden Raisins)
- salt (to taste)
