- 6 oz. pineapple juice
- 1/2 tsp. ginger powder
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 tsp. regular soy sauce
- 1 tsp. dark soy sauce
- 1/4 cup brown sugar
- 2 1/2 Tbsp. key lime juice (about 4 Key Limes)
- 1/2 tsp. lime zest
- 1/2 cup ketchup
- 1/4 cup tomato paste
- 1/2 tsp. chili paste (red, optional)
- 2 lb. pork tenderloin (cleaned of silver skin and cut into one-inch cubes)
- 1 Tbsp. sherry wine
- 1 tsp. regular soy sauce
- 1 tsp. oyster sauce (optional, you can also just increase the amount of soy sauce used)
- 2 Tbsp. key lime juice (about 3 or 4 Key Limes)
- 2 egg whites
- 3/4 cup corn starch (or more, for dredging pork. Excess will be discarded)
- 2 canola oil (–3 inches of, for your wok)
- 5 Tbsp. canola oil (divided, it’s OK to use some of the oil you used to fry the pork)
- 1 Tbsp. fresh garlic (minced)
- 1 Tbsp. fresh ginger (minced)
- 1 cup onion (cut into large bite sized pieces)
- 1 bunch scallions (white part cut into one inch pieces, tops used as garnish, optional)
- 1/2 fresh pineapple (cleaned and cut into chunks, about 2 cups)
- 1/2 lb. carrots (cleaned and cut on bias into bite sized pieces)
- 1 green pepper (large, cut into large bite sized pieces)
- 1 bunch scallion (tops, sliced and used as garnish, optional)
