  • 1 tablespoon vegetable oil
  • 1 white onion (cut into thick wedges)
  • 1 pound vegetable (frozen, stir-fry mix)
  • 2 cups sweet and sour sauce (with pineapple)
  • 16 ounces egg noodles (soaked in boiling water for 5 mins, drained)
  • 1/2 rotisserie chicken (large, skin and bones discarded, meat coarsely shredded)
  • 2 green onions (thinly sliced)

    Directions

    1. Heat a wok or frying pan over high heat. Add oil and swirl to coat surface. Add onion. Stir-fry for 1 min, or until starting to brown. Add vegetables and stir-fry for 2 mins, or until starting to soften. Add sauce and noodles. Stir- fry for 1 min, or until heated through. Add chicken and toss to combine.
    2. Serve topped with green onions.
