- 2 Tbsp. rice vinegar
- 2 Tbsp. ketchup
- 1 Tbsp. soy sauce (low-sodium)
- 2 tsp. sesame oil
- 1 Tbsp. sugar
- 2 tsp. cornstarch
- 1 Tbsp. canola oil
- 1 lb. skinless boneless chicken breast (sliced into 1/2" cubes)
- 1 green bell pepper (small, chopped)
- 1 red bell pepper (small, chopped)
- 2 scallions (thinly sliced)
- 2 garlic cloves (minced)
- 2 tsp. minced ginger
- 1 cup pineapple (chopped)
- 12 egg roll wrappers

Directions
- In a small bowl, whisk together the first seven ingredients; set aside.
- Heat 1 Tbsp. of the canola oil in a large skillet over medium heat. Add the chicken cubes and cook until it's no longer pink; about 5 minutes
- Add the peppers, scallions, garlic, ginger, and cook, stirring often until the peppers are slightly tender; about 3 minutes.
