- 1/2 green bell pepper (seeded and cut into large chunks)

- 14 oz. pineapple chunks (drained, save the juice)

- 1/2 cup light chicken stock
- 1/2 cup pineapple juice (from canned pineapple chunks)
- 1/4 cup honey (unpasteurized)
- 1/4 cup rice vinegar (unseasoned)
- 2 Tbsp. coconut aminos
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. fish sauce
- 1 Tbsp. sambal oelek
- 1 clove garlic (finely minced)
- 1/2 tsp. salt (I use Himalayan salt)
- 1 tsp. ground ginger
- 2 Tbsp. tapioca starch
