- 2 tsp. oil (I use non-GMO canola)
- 1/2 lb. chicken breasts (cut into 1” cubes)
- 4 cups peppers (colored, coarsely chopped)
- 1 cup onion (coarsely chopped)
- 1 1/2 cups fresh pineapple (cut in big chunks)
- 1/4 cup pineapple juice (I use canned)
- 1/3 cup chicken stock
- 1/4 cup rice vinegar
- 1 Tbsp. soy sauce (I use low sodium)
- 3 Tbsp. brown sugar
- 2 Tbsp. cornstarch
- 1 clove garlic (crushed)
- 1/4 tsp. salt
- pepper (to taste)
