- 2 Tbsp. goose fat (cooking fat, which I only had a little bit of, but any oil would do)
- 3 lb. beef brisket (keep the fat)
- 4 large onion (I used 2 red and 2 white, as you can see on the pictures)
- 6 cloves garlic
- 1/2 cup red wine (optional)
- 1 cup tomato sauce (or ketchup)
- 1 cup beef stock (brown)
- 3 Tbsp. brown sugar
- 1/2 cup apple cider vinegar
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 stick cinnamon
- 1/4 tsp. ground cloves
- 3 whole cloves
- 1/2 tsp. paprika
- 4 allspice berries
- 1/3 cup dried fruit (of your choice, I used dried cherries and raisins.)

It was delicious and very tender. I used dark molasses instead of brown sugar. I also added chopped fennel chunked potatoes, celery and carrots to the pot. I love one pot dinners. I served it with crusty rolls. YUM!
