  • 2 tablespoons goose fat (cooking fat, which I only had a little bit of, but any oil would do)
  • 3 pounds beef brisket (keep the fat)
  • 4 large onion (I used 2 red and 2 white, as you can see on the pictures)
  • 6 cloves garlic
  • 1/2 cup red wine (optional)
  • 1 cup tomato sauce (or ketchup)
  • 1 cup beef stock (brown)
  • 3 tablespoons brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 stick cinnamon
  • 1/4 teaspoon ground cloves
  • 3 whole cloves
  • 1/2 teaspoon paprika
  • 4 allspice berries
  • 1/3 cup dried fruit (of your choice, I used dried cherries and raisins.)
