- 1/2 cup unsalted butter (cold, cut into 1-inch cubes)
- 1/4 cup ice water
- 2 sweet potatoes (medium-small, around 1 1/4 lbs weight)
- 1 Tbsp. grapeseed oil (in a pinch, substitute with another neutral vegetable oil like canola)
- 1/4 tsp. kosher salt
- 3 Tbsp. unsalted butter
- 3 Tbsp. maple syrup (grade B, see baker's notes, separated into 3 tablespoon and 1 teaspoon portions)
- 1 tsp. ground cumin
- 1 large egg
- 1 Tbsp. maple sugar (in a pinch, use granulated sugar)
- 1 Tbsp. goat cheese
